Melomakarona

  • 1/2 pound melted butter
  • 1/2 cup oil
  • 1/2 cup Crisco
  • 1/2 cup sugar
  • 1 jigger vanilla
  • 2 eggs
  • Juice and rind from 1 orange
  • 1/2 tsp. baking soda
  • 1/2 cup finely chopped walnuts
  • 4 1/2 cups flour

Beat together butter, oil, and Crisco. Beat sugar, vanilla, and eggs together. Add to butter mixture and mix well. Add orange juice, rind, and baking soda mixing well. Fold in nuts and flour. Mix until a nice dough forms that rolls out without being sticky. Roll into 1 inch balls and flatten with palm of hand.

Bake at 375 for 20 minutes or until golden brown. Keep in an airtight container until ready to honey. May also be frozen for several months.

Heat honey in a saucepan, adding a small amount of water. Be careful when heating honey, it boils over quickly. When honey is heated and liquid, remove from heat. Dip cookies in warm honey and let stand for a few minutes. Take out and place on a plate or platter. Sprinkle with finely chopped nuts.
